Tofu and Veggies in Coconut Milk and Herbs

This is a fast and healthy dish you can do for lunch or dinner. This is rich in healthy fats and greens that’s good for the heart. This dish is so rich in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium. 🙂

Ingredients

  • Squash
  • Onion
  • Garlic
  • Gynger
  • String Beans
  • Okra
  • Coconut Milk
  • Turmeric powder
  • Curry Powder
  • Bay Leaves
  • Salt and Pepper
  • Herbs – Basil, Thyme, Rosemary

Instructions

  1. Saute onion, garlic, and gynger, and add squash and string beans.
  2. Once the squash is a bit soft, add the okra, coconut milk, bay leaves
  3. Dash of turmeric powder, curry powder, basil, thyme, rosemary, salt and pepper to taste.
  4. Enjoy 🙂
